– I am very adaptable person who is used to changing circumstances. As an example, once I was on my way to work and the area manger phoned me to say that one of the supervisors within the company was unwell so he asked me if I could go to a different town and cover their shift there. I have never worked in that restaurant before but I was more than happy to go and help them out and gain different experience. I am keen to learn so that was a new opportunity for me.

Good, this is a specific example of your flexible approach which says much more about you to a recruiter than a simple statement such as ‘I am adaptable’ can.

‘A mature, energetic and hardworking employee with varied workplace experience’– what you include in your CV should prove this so it’s a bit wasted to say it as well
‘Adaptable, flexible and keen to learn’– you need evidence of this otherwise it’s just empty words. ‘Works well under pressure’– similar to what others say in their cv. I’d delete this whole paragraph unless you can make it a lot less generic

Choose the parts of your CV which are most likely to grab recruiters’ attention. Your IT skills probably aren’t the most relevant skills they are looking for so you may start to lose their interest before really grabbing it.
You need evidence to support these skills otherwise they don’t prove anything.
